Budget: Onion, Aubergine & Tomato Bake (v)



Serves: 4 | Prep Time: 5 mins | Cook Time: 50 mins

When you've just finished work and you just don't have the energy to cook up a storm, there's nothing better than throwing a few ingredients together and putting it in the oven - especially when everything can be done in the same pot (bonus less washing up)

Chopping up all the veg, mixing them together with tinned chopped tomatoes to create the base, topped with fresh bread crumbs and a whole lot of cheddar cheese - the breadcrumb finish gives the dish the crunch it needs, as the melted cheese simply gives it life.

As we made it in a large pot, we had enough for dinner and left overs to take into work - win win.

This vegetarian friendly dish is not only healthy, but it also has the advantage to become more, you could add pasta and create a pasta dish, you could also add chorizo to give it more flavour or simply for all you meat eaters out there!

Ingredients:

100g white bread (90p)
100g Cheddar cheese (£1.90)
2 onions (32p)
1 aubergine (70p)
200g spinach (90p)
2 x 400g tins chopped tomatoes (70p)
1 garlic clove (30p)
2 tsp dried oregano (70p)

Total: £6.42


Instructions:

1. Preheat the oven to 180°C. In a bowl mix together 100g fresh breadcrumbs and 100g grated cheddar cheese, set aside.


2. Heat 1 tbsp oil in a frying pan and cook 2 thickly sliced onions over a medium heat for about 5 minutes until softened and browned slightly. Add 1 chopped aubergine and spinach, cook for another 5 minutes until browned/wilted.


3. Pour in 2 cans chopped tomatoes, 1 crushed clove garlic and 2 tsp dried oregano. Bring to the boil and simmer for 10-15 minutes, stirring, until thickened a little. Season then spoon into an oven-proof dish, sprinkle over the breadcrumbs and cheese and bake in the oven for 20–25 minutes, until the top is golden and the tomato sauce bubbling.
