Budget Series: Aubergine, Bean and Potato Curry #Nomineat


Serves: 3-4 | Prep Time: 5 mins | Cook Time: 40 mins

We were approached by Sheffield Futures to join their cooking campaign in support of Money For Life. Sheffield Futures is dedicated to helping Sheffield's young people to reach their full potential and achieve the best out of life, whatever their starting point.


As a part of this campaign, we will be sharing a recipe to you and the young people that Sheffield Futures supports by providing a meal that is good for value for money. If you would like to get involved, see how with the steps at the end of this post!

The dish we chose to make is a super hearty, winter dish, could easily be made for 4 people or to make to spread across as meal planning. We paired this dish with naan bread, but could easily be paired with rice or a side salad, and could easily be altered to your preference of spice level.

Ingredients:

- 3 tbsp sunflower oil
- 3 garlic cloves, chopped (25p)
- 1 aubergine, cut into large chunks (70p)
- 1 large red onion, sliced (12p)
- 145g of medium curry sauce (£1.74)
- 400g new potatoes, halved (80p)
- 330g cherry tomatoes (89p)
- 250g green beans, trimmed (89p)

Total: £5.39
(based on ASDA pricing)

Instructions:

1. Heat the oil in a large saucepan, add the aubergines and cook for 5 mins.
Stir in the onion and cook for a further 10 mins until the aubergine is golden and the onion soft.

2. Stir in the garlic and curry sauce and cook for 2 mins.

3. Add the new potatoes and tomatoes and add water accordingly.
Bring to the boil, cover and simmer for 15 mins until the potatoes are tender.

4. Add the beans and cook for 5 mins until tender and season.

1) Cook your favourite meal with ingredient coming to a max of £3 per person

with a video or photograph, include the cost of products if possible

4) Nominate a friend or family member using #Nomineat hashtag

  4. Sounds yummy - I feel totally ignorant because I actually don't know what "aubergine" is!! I never share photos of things I cook online....it's way too hard to make them look nice. But I admire and appreciate those of you who do!!

  5. Everytime I come to your blog I always get super hungry and this was no exception! I love the idea of the budget meals as a student because it helps me think a bit more creatively and makes a change from pasta every night (though I do love pasta). I can't wait to try out this recipe!

  12. I am constantly mocked by my friends here at uni for living almost entirely off curry - it's just too good! Thai red and green curries are a staple for me, as is my home-made vegan madras, deeeelish! It looks like I'll have to add this one to my repertoire as well, aubergine is one of my favourite veggies and who can resist a soft naan bread either? Scrum-diddly-uptious!
