Under 30: Soft Cheese Gnocchi with Bacon & Spinach



I don't know about you but gnocchi hasn't always been something I think of straight away when planning for a meal. We've had it once before and we simply knew we wanted to have it again.

Although, if you're a picky textured person like me, Jessica, you'll have to keep an eye out on how long you boil the gnocchi for because it's takes super quick and if it's done too much, it'll be like mush and personally, not in a good way.

Also, huge tip or not if you're super smart, there's no need for any seasoning of salt because those bacon rashers will be enough!

Like most pasta dishes, this is super easy and really good for a tasty quick meal if you're on the go.




Serves: 2 | Cook Time: 20 mins

Ingredients:

- 400g bag fresh gnocchi
- 2 rashers bacon
- 50g bag spinach leaves
- half a tub of garlic & herb soft cheese
- 3/4tbsp milk

Instructions:

1. Boil a large pan of water, add the gnocchi and cook for 3 minutes. Meanwhile, in another pan, fry the bacon until crispy. Add the spinach, stir for 1 minute until wilted, then add the Crème de Saint Agur and the milk. Stir until smooth.

2. Drain the gnocchi, toss with the sauce and serve.

  5. This sounds sooooo good! You’re making me hungry now! I like how simple it is too, often when I’m cooking I’m hungry so I want to get it done quickly, meaning I end up eating the same boring things! Great recipe!

  9. I. BLOODY. LOVE. GNOCCHI. It's just so easy to make and delicious every single time! Like Jessica, I have to have mine slightly firm because mushy gnocchi isn't anyone's friend! Cheesy sauces definitely go best with gnocchi in my opinion, so this is definitely something I'd want to try out! It breaks my heart that veggie / vegan bacon is so gross (the texture just isn't nice - blergh), but I have found that Cauldron's marinaded tofu is a really delicious alternative! I will certainly be recreating this because I'm a big spinach lover as well!

  10. This sounds delicious. I've never made gnocchi but I'd love to try. And I eat so much raw spinach (I know, I'm a weirdo!) it would be nice to actually cook with spinach, haha.
