Under 30: Goat's Cheese & Mushroom Risotto (v)

Serves: 4 | Prep Time: 5 mins | Cook Time: 5 mins


As Winter approaches us, it only means that the colder days need to be balanced with warmer heartier meals. Risotto is exactly what we all need; it's quick, simple, easy to have it however and whatever you like.


We've made risotto different ways before, with meat, tomatoes and more, but this time we've gone in with goat's cheese! If you know us, you'll know we love cheese and all that cheese has made this dish even heartier than ever.

The best part about this dish is that you can make it in bulk and do some meal prepping for the week or for the whole family!


Ingredients:

2 tsp light olive oil
1 x 200g pack button mushrooms, sliced
- 1 tsp finely chopped rosemary
- 1 garlic clove, crushed
- 300g risotto rice
- 120g pack goat’s cheese
- 250ml vegetable stock
- Parmesan shavings, to serve

Instructions:

1. Heat the oil in a pan over a medium heat. Add the mushrooms, rosemary and garlic, then cook for 5 minutes, or until golden.

2. Meanwhile, cook the rice with the stock, stirring until absorbed. Add to the mushroom mixture. Stir in the goat’s cheese, until melted and creamy.

3. Season to taste and serve. Scatter over the cheese shavings and extra goat's cheese if you like.

  7. I am always a little nervous at cooking rice because I worry about welding it to the bottom of the saucepan haha! I will definitely have to try this recipe out though, because mushrooms and goats cheese are two of my all time favourite ingredients! Hearty food like this is certainly a winter essential!
