Sunday Soup: Creamy Mushroom (v)

Serves: 2 | Prep Time: 5 mins | Cook Time: 15 mins

It's November, Halloween is officially over and it's time to full focus on being autumnal - the soup recipes are coming out! So each Sunday of this month, we'll be sharing our favourite recipes for this year and what better way to start than a classic creamy mushroom soup!

It's so easy, thick and hearty perfect combination with some crusty bread or garlic bread like we have (which we are hoping to create homemade garlic bread on the blog soon too)

1 tablespoon unsalted butter
- 8 ounces white button mushrooms, sliced
- 1onion, diced
- 1/8 teaspoon garlic powder
- 3/4 cup low-sodium vegetable broth
- 1/4 cup flour
- 1/2 cup milk
- Salt and freshly ground black pepper


1. In a large saucepan, melt butter over medium-high heat until the foaming subsides. Add mushrooms and saute. Cook until the onion and mushrooms have released most of their liquid, about 5 to 7 minutes. 

2. Add the garlic powder, and the vegetable broth. Bring to a simmer. 

3. In a small bowl, whisk together the flour and milk. Stir in the flour mixture and cook until soup has thickened, about one minute. Season to taste with salt and pepper.



  1. I love mushrooms. For some reason I always get nervous at the thought of making soup, but this is one that I could try out.

  2. For some reason I always shy away from mushroom but when I eat it I do really like it! This soup looks absolutely delicious and the perfect winter warmer to take in to work with me!
