Sunday Soup: Creamy Asparagus (v)

Serves: 4 | Prep Time: 10 mins | Cook Time: 25 mins


Lately we've been feeling like we haven't been eating our best and we felt this soup would be the best quick fix. Asparagus isn't something we usually use a lot in dishes but it is a very underrated vegetable to be honest, what do you think?


This soup wasn't the thickest, maybe we put too much stock or not enough asparagus but it does the job, a nice hug in your tummy and that kick from the chilli is perfect if you're still recovering from having the flu.

We really want to experiment more with this dish, we hope to adjust and tweak it to make it better than it is. Will you be trying this soup dish?

Ingredients:

1 tablespoon olive oil
- 1 leek, cleaned and thinly sliced
- 1 clove of garlic, chopped
- 1 1/2 pounds asparagus, woody ends broken off and cut into 1-2 inch pieces
- Pinch of red pepper flakes
- Salt and black pepper to taste
- 4 cups low sodium vegetable broth
- 1 cup plain non-fat or 2% Greek yogurt

Instructions:

1. Heat a the olive oil in a large pot over medium-high heat.


2. When the pot is hot add in the leek, garlic, red pepper flakes, salt and pepper and sautè for 3 minutes or until the leek starts to soften.

3. Add in the chopped asparagus and sautè another 3-4 minutes.

4. Pour in the vegetable broth and water and bring to a boil.

5. When the soup is boiling, cover with a lid, lower the heat to medium-low and simmer for 20 minutes or until the asparagus is very tender.

6. Remove from the heat and use an immersion stick or blender to blend the soup until it is smooth.

7. Stir in the Greek yogurt and season with more salt and pepper to taste.

  1. I've been meaning to try a new flavour soup now the weather is getting colder and I never would have thought of asparagus! I love the classic tomato soup but it'll be nice to try something different.

    If I give this recipe a go I will let you know :)

  3. This sounds great! I struggle with soup because the instant broth doesn't work well with my body and I'm lazy, but this sounds just easy enough for me to try! And I love asparagus, so I'm looking forward to trying it out.

  8. I. Adore. Asparagus. It is one of my all time favourite vegetable accompaniments, a bit of steamed asparagus makes every dish better hehe! This soup sounds delicious, I really don't mind if it's a little on the watery side! The colour is so appetising and I love the description of a hug for your tummy, that's a really lovely way of thinking about it hehe! This is a perfect winter warmer!
