Under 30: Mexican Beef Stew

Welcome to another brand new series; this month we'll be creating various dishes that only take 30 minutes or less to prep and cook. As we are full time workers and gym enthusiasts, we are always looking for quick and easy (mostly healthy) recipes to make! We hope you enjoy this series and do let us know if you create any of them and what you thought!



Serves: 4 | Prep Time: 5 mins | Cook Time: 15 mins

Ingredients

- 1 tbsp oil
- 350g (12oz) beef strips (£3.50)
- 1 red onion, cut into wedges
- 1 x 31g pack coriander, leaves and stalks separated
- 1 x 95g jar chipotle chilli and smoked paprika paste (£1.25)
- 1 x 400g tin butter beans, drained (50p)

Total: £5.25

Instructions:

1. Heat the oil in a large frying pan, when hot add the beef and onion wedges and stir fry for 5 minutes, until the beef is brown and the onion beginning to colour.

2. Finely chop the coriander stalks and add to the pan, along with the paprika and chilli chipotle sauce. Fill the sauce jar with freshly boiled water and add to the pan with a further 2 jars of water. Bring to a simmer.

3. Stir the butter beans into the stew, season with plenty of salt and pepper, warm through for 2 minutes, or until the beans are hot. Remove from the heat, stir through the coriander and serve.

  2. This looks super yummy! I'm a big lover of paprika, especially the smoked variety, it gives such a lovely flavour to any dish! Like Hayley, I'd love to recreate this dish with a meat alternative (maybe tofu?) or some veggies!

  4. I don't eat meat, so this isn't for me. However, my partner loves beef, so this will be something to try with him. Plus its cheap to make! So it will suit our budget down to the ground!
