Lean15 Series: Cheesy Chorizo, Chicken and Spinach

Serves: 2 Prep Time: 5 mins | Cook Time: 10 mins


- 1 tbsp Coconut Oil
- 150g Chorizo, finely diced (£2)
- 1 Red Onion, diced (17p)
- 480g Skinless Chicken Breast Fillet, cut into 1cm slices (£3)
- 8 Cherry Tomatoes, sliced in half (90p)
- 200g Baby Spinach (£1)
- 1 ball of Mozzarella, torn into chunks (80p)
- 40g Pine Nuts (£2.80)

Total: £10.67


1. Heat the coconut oil in a large frying pan, with a medium to high heat. Add the chorizo and fry for a minute. Add the onion and fry for another minute.

2. Increase the heat to maximum and add the chicken, along with a generous pinch of salt and pepper. Stir fry for about three minutes, by this time the chicken should be cooked through.

3. Throw in the cherry tomatoes and cook for a minute. Toss in the spinach and stir through until fully wilted. Use a wooden spoon to make little pockets in the chicken and vegetable mixture, then drop in small chunks of the mozzarella. Turn off the heat and let the mozzarella melt before spooning the whole delicious lot onto a plate, and scatter over the pine nuts.
