Budget Series: Week 3


These ingredients make up 5 dinner meals, for 4 people (you save more money in bulk, plus leftovers are always a plus or have for lunch the following day, as I would do usually, as I, Jessica come home for lunch from work)

Do come back during the week as we reveal what fun meals we'll be making on a budget! Each week we'll try vary as much as we can with fish, meats and veggie friendly dishes.

Let's begin - Shopping List, Week 3

- 1 Red Onion, cut into thin rings (17p)
- 12 Eggs (£1.75*)
- 1 large Ripe Avocado (£1)
- 1/2 Lime, juiced (35p)
- 3 Spring Onions, thinly sliced, to serve (49p)
- 500g Beef Steak Mince (£4)
- 1 tsp Dried Chilli Flakes (85p)
- 500g Chicken Thigh Fillets, cut into large chunks (£3.50)
- 1 Red Onion, thickly sliced (17p)
- 230g jar Spicy Mango Chutney (£1)
- 400ml tin Light Coconut Milk (99p)
- 1 Broccoli Head, trimmed and cut into florets (45p)
- 150g Fusilli Pasta (59p)
- 2 tbsp Double Cream (60p)
- 50g Feta Cheese (£1.20)
- 180g Oak-smoked Lardons (£1.30)
- Handful fresh Parsley, roughly chopped (70p)

Total: £19.71

Here are the list of items which will be included in the upcoming dishes, but have not be purchased/included in the price above:

- Cooked Rice, for serving x 3

- 1 tbsp Olive Oil
- 1 tbsp Sesame Oil
- 3 tbsp Vegetable Oil
- 1 tbsp Extra-virgin Olive Oil
- Olive Oil (cooking spray)

- 1 Onion, finely chopped
- 9 Garlic Cloves, crushed
- 3cm fresh Ginger, grated

- 1/4 tsp Cayenne Pepper
- 1/2 tsp Smoked Paprika

- 70g Brown Sugar
- 60ml Soy Sauce
- Splash Malt Vinegar

- 1 Carrot, grated
- 1 tbsp Sesame Seeds
- 150g Self-raising Flour
- 250ml Milk
-1 tsp Baking Powder
- 75g Butter, melted
- 1 tsp Plain Flour
