Budget Series: Griddled Peppers with Couscous (v)


Serves: 4 | Prep Time: 5 mins | Cook Time: 15 mins

Ingredients:

- 500g Courgettes, thinly sliced lengthways (£1.29)
(Due to the Courgette crisis, we had to use Bell Peppers)
- 2–3 tbsp Olive Oil
- 200g Couscous (70p)
- 1 Lemon, juiced (35p)
- 2 tsp Chilli Flakes
- 150g Cherry Tomatoes, halved (79p)
- Bunch Spring Snions, finely sliced (49p)
- Parmesan (£2)

Total: £5.62

Instructions:

1. Heat a griddle pan over a high heat. Put the courgettes bell peppers in a bowl and drizzle over the olive oil. Toss to coat, then cook for 1-2 minutes each side, until griddle marks show.

2. Meanwhile, prepare the couscous following the packet instructions. Use a fork to loosen the grains.

3. Combine the lemon juice, chilli and extra virgin-olive oil, and pour over the couscous. Stir through the courgettes bell peppers, tomatoes, onions and a little seasoning. Grate over some cheese, to serve.
