Budget Series: Bacon & Sausage Carbonara

Serves: 4 | Prep Time: 10 mins | Cook Time: 15 mins

Ingredients:

- 400g Penne (55p)
- 4 Sausages (£1)
- 8 slices Streaky Bacon (£1.67)
- 1 Onion, finely chopped (87p)
- 3 large Egg Yolk (£1 ~)
- 4 tbsp Single Cream (58p)
- 85g Parmesan, finely grated (£2.50)
- Handful Parsley, finely chopped (60p)

Total: £9.22 (~ approx.)

Instructions:

1. Cook the pasta following the packet instructions. Meanwhile, squeeze the meat out of the sausages and roll into balls.

2. With a frying pan, cook the bacon until crispy, then set aside. In the same frying pan, cook the sausage balls until golden and cook through, then set aside. Also in the same dying pan, oil the onion until soft.

3. In a small bowl, mix in the egg yolks, cream, most of the Parmesan and parsley with pepper and salt to taste.

4. When the pasta is cooked and drained (leave some payday water for the sauce), leave the pasta in the pan, off heat, add the egg mixture, onion and sausage balls. Mix well and adding some pasta water until you have enough sauce to cover the pasta.


5. Serve into bowls, sprinkle the remaining Parmesan and parsley and top with the crispy bacon.
