How To: Slow Cooker Chicken & Sausage Casserole

It has been a while since we've used the slow cooker that James' grandma gave him, so while doing our weekly food shop, we decided we'll find an easy recipe to just throw in the slow cooker while we're at work.

Jessica comes home for her lunch break, it literately so easy to do and such a time saver, as it was fully cooked and ready to be served once we got home.

Serves: 4 | Prep Time: 10 mins | Cook Time: 3 or 6-8 hours


- 450g boneless skinless chicken breasts
- 2 thick pork sausages, cut into small rounds
- 1 cup chopped onions
- 1 clove minced garlic
- 1 can (14.5 ounces) diced tomatoes
- 3 tablespoons tomato paste
- ½ cup tomato sauce
- 1 packet of Chicken or Sausage casserole seasoning
- ¼ teaspoon cayenne (or more for a bit more spice)


1. Place all the ingredients in the crockpot.
Cover and cook on low for 6-8 hours or high for 3 hours.

2. Shred the chicken directly in the crock pot to your desired texture. Add any extras, if you want, and cover and cook for another 20-30 minutes. This is also a great time to make your rice, if you're serving it with rice. When everything is ready, taste the chicken mixture and season with salt.
Serve the casserole over rice.
