How To: Seared Pepper Steak Salad with Chimichurri Dressing



As mentioned in our Foodies Festival post, we had come across HelloFresh and we had received our first box of 3 meals for 2 last night. We decided to go with the most quick meal to start with and oh, how easy it was. Basically, the main concept is that they deliver healthy recipes to your door each week with all the correct amount of ingredients and instructions to make delicious and nutritious dinners. So without further ado... Seared Pepper Steak Salad with Chimichurri Dressing...

Serves: 2 | Prep: 10 minutes | Cooking: 15 minutes

Ingredients:

- 2 Flank Steaks
- 1 pack of Baby Potatoes, halved
- 1 Garlic Clove, chopped
- 1/2 bunch Flat Leaf Parsley, chopped
- 1/4 bunch Oregano, chopped
- 1/4 tsp Chilli Flakes
- 1 tbsp Red Wine Vinegar
- 1/2 bag Baby Spinach

Instructions:

1. Remove the flank steak from the packaging, rub very light coating of olive oil on each steak.
2. Chop potatoes in half and them to a medium sized pot of water with a pinch of salt and bring to the boil. Cook for 12-15 minutes until they are soft.
3. Finely chop the garlic, sprinkle with a little salt and mash to pass with a plat part of your fine or spoon. Chop the parsley and oregano very finely.
4. Mix your garlic, parsley and oregano with the chilli flakes and red wine vinegar. Use a fork, whisk your garlic and herbs together with a good splash of extra virgin olive oil to make the chimichurri dressing.
5. Heat a large frying pan until it is VERY hot. Sprinkle each side of your steak with a good pinch of salt and a few good grinds of black pepper.
6. Add a splash of olive oil to the pan and place your steak in the pan. Sear on each side for 2-3 minutes (less if you like it really rare or a bit longer for slightly more well done). When cooked to your liking, remove from the pan and set on a board to rest for 2-3 minutes,
7. Once cooked, drain your potatoes. Add them to the salad bowl, together with the spinach. Dress your potatoes and spinach with half of your chimichurri dressing. Slice each steak diagonally against the grain of the meat into the strips and lay on top of your salad. Drizzle with any remaining dressing and tuck in!
