How To: Roasted Chicken with Pancetta Lentils

Serves: 2 | Prep Time: 5 minutes | Cooking Time: 25 minutes

Ingredients:

- 4 Chicken Thighs
- 4 spoons Thyme
- 1 Carrot, chopped
- 1 Onion, chopped
- 1 Celery stick, chopped
- 1 pack Green Beans
- 1/2 bunch Flat Leaf Parsley
- 1 tin Organic Vert Lentils
- 1 pack Pancetta
- 1 Bay Leaf

Instructions:

1. Pre-heat your oven to 220 degrees. Pat the chicken skin dry with some paper and rub a knob of butter or olive oil on each thigh. Rub in a good pinch of salt and pepper and sprinkle half the leaves from the thyme. Cook them in your oven on the top shelf for 25 mins, until the skin is nice and crispy. Rest out of your oven afterwards.
2. Peel and finely chop the carrot and onion. Finely chop the celery and remove the ends from the green beans. Finely chop the parsley and drain and rinse the lentils.
3. Add a splash of olive oil to a non-stick frying pan on medium-high heat. When your oil is hot, cook the pancetta until it is crispy around ht edges. Remove your pancetta from the pan and keep it to the side for later.
4. Heat another dash of olive oil in the same pan you cooked your pancetta in and turn the heat medium-low. Add your carrot, onion, celery, bay leaf and your remaining thyme leaves. After about 5 minutes your veggies should be nice and soft. Now boil a pot of water with a pinch of salt for the green beans.
5. Add your pancetta and lentils to the pan with your veggies. Mix together and season with a couple of pinches of salt and pepper. Turn off the heat.
6. Cook your green beans for 4 mins in the boiling water. Drain them and then immediately run them under cold water.
7. Once your chicken is ready, toss your parsley and your green beans into your lentils. Serve with your chicken on top.

  1. Mmm pancetta lentils! Yes!!! Can't ever go wrong with chicken can you!! This sounds and looks gorgeous! We are trying it!!
