How To: Coriander Spiced Pork with Couscous and Herby Salad


As some of you may know, James has been away for the past few days, hence the lack of foodie posts, but since we had our HelloFresh delivery, it was a shame to put it to waste and how could I den sharing this with you. My cousin came over, for a girly night in, rose wine and all, and I made this delicious couscous dish!

Ingredients:

- 2 Pork Medallion
- 2 tbsp Ground Coriander
- 1/2 Vegetable Stock Pot
- 150g Couscous
- 2 Vine Tomato, chopped
- 3 Spring Onion, sliced
- 1 bunch Oregano, chopped
- 1 bunch Flat Leaf Parsley, chopped
- 1/2 Dijon Mustard
- 1/2 Lemon
- 300ml Water
- 2 tbsp Extra Virgin Olive Oil

Instructions:

1. Place the pork on a plate, drizzle over a glut of oil and season with salt and pepper. Sprinkle over half the ground coriander and massage into your pork. Keep to one side.

2. Bring the water to a boil in a pot. Dissolve the vegetable stock pot in the boiling water with a splash of oil. Pour in the couscous, cover the pot with a lid or plate, remove from the heat and leave for 10 mins.

3. Heat the frying pan on a medium-high heat and add a splash of oil. When the oil is hot, add your pork to the pan and cook for 5 mins on each side. Reduce heat if necessary.

4. Chop the tomato and pop these into a bowl. Remove the roots from the spring onion and slice thinly as you can. Roughly chop the oregano and parsley leaves. Take half your spring onion, half your oregano and half your parsley into the bowl of tomato. Mix well and stir in the Dijon mustard and juice of half of the lemon. Add a pinch of salt and then mix in the extra olive oil.

5. While you pork is resting, mix your leftover herbs, remaining ground coriander and spring onion through your couscous. Squeeze the remaining lemon juice.

6. Slive your pork widthways unto five slices. Spoon a generous amount of couscous onto each plate. Top with your pork and finish with your herby salad. Enjoy!

    1. We defo will be making more veggie friendly meals in the future, but in this case, I do believe some roasted vegetables would just great with couscous!

  5. This looks so delicious and I definitely need to try my hand at this. Also, Couscous is such and underrated grain, in my opinion, and it's absolutely great and deserves more love.
