How To: Guacamole Chicken

Tonight we decided to do a twist on one of our favourite recipes! On our first Valentine's Day I, James, cooked herbed cream cheese stuffed chicken, wrapped in bacon with pesto linguine. I combined two cookbook recipes to make this and since we have cooked it once again for ourselves,  and also my family most recently.

But this week we saw something very similar - but instead of stuffing it with cheese, we stuffed it with Jessicas favourite food - guacamole! Homemade guacamole of course! 

It definitely lived up to expectations and instead of having it with pasta, we bought some garlic cheese stuffed mushrooms, sweet potato fries and Mediterranean grains (which surprisingly were so good and healthy at the same time!) 



- 4 small avocados (peeled & halfed)
- 2 small tomatoes (chopped)
- 5g of coriander (chopped)
- Juice of 1 lime (halfed & squezzed)
- 1 small red onion (diced)
- 2 green finger chillies (chopped)


- 2 chicken breasts
- 4-6 slices of bacon

Bought sides (Tesco)

-  T.Stuffed Cream Cheese & Garlic Mushrooms
- Sweet Potato Chips (no longer listed on Tesco(?))


1) Peel and de-seed the avacados and place them in a large bowl
2) Combine the avacado, chopped tomato, chopped red onion, coriander, lime and chopped chillies
3) Cut through the middle of the chicken breasts, creating a pocket for the guacamole
4) Spoon in the avacado and close the chicken
5) Wrap each breast with two or three rashers of bacon and place in the oven for 30 minutes
